Leftover Makeover Turkey Meatballs

I hate wasting food. There is nothing worse than throwing away unused food, or being stuck with ingredients in your pantry you’ve only used once!  Whenever I see a new recipe I get so excited to make it, that I rush to the grocery store to buy all the new ingredients, only to be stuck with a bunch of ingredients I only used once or twice. Now what? Those ingredients stay stuck in the fridge until I throw them away.

Well my pocket book doesn’t love that. If you are trying to save a little money or just use up some old ingredients than stick with me… we’re going to get creative today!

This past week I was going through my fridge trying to use up my left overs and dwindling pantry items and had a brain blast… why not throw my leftovers into a juicy meatball? It was a leftover makeover miracle!

I wanted to create a meatball that was both comforting and juicy, but also loaded with healthy nutrients! My meatball needed lots of protein, healthy fats and complex carbs to power my week!

As I concocted a turkey meatball recipe I was shocked just how delicious my meatballs turned out. I loaded them with carrots, oats, fresh parsley, garlic, and my favorite ingredient some chopped almonds! Now I know those don’t sound like typical meatball ingredients but that is what made these so fun and healthy!

Each ingredient complimented each other, and played an important role in the perfect meatball.

The carrots, parsley, and garlic gave these meatballs a fresh bite and some added vitamins! The rolled oats acted as my binder so that my yummy meatballs stayed together and didn’t fall apart!  You could use a bread crumb, but I loved the extra dose of healthy carbohydrates and protein that the oats added to my meatballs! Finally, I added some almonds! This was a game changer. These slivered almonds were a big dose of healthy fats but they added such a fun crunch to each meatball.

The best part about this recipe is I didn’t have to buy one single ingredient! I just utilized the foods I had around my home! Sometimes our best recipes come from the most unusual ingredients. Get creative with your ingredients in both fridge and pantry, and you’d be surprised what fun new healthy recipes you could create.

Left Over Makeover Turkey Meatballs


1 lb Ground Turkey

2 Eggs

½ cup rolled oats

¼ cup slivered almonds ( or chopped)

¼ cup shredded carrots

¼ cup Fresh Parsley

½ tsp oregano

½ tsp salt

¼ tsp pepper

½ tsp garlic powder


  1. In a large mixing bowl add your ground turkey and spices. Mix into meat well.
  2. Add in oats, eggs, almonds, carrots, and parsley. Mix with hands until well combined and ingredients all evenly distributed.
  3. Prepare a large sheet pan lined with parchment paper. Make ice cream scoop sized balls and place on parchment 1 inch apart.
  4. Place meatballs in oven preheated to 350 degrees and bake for 25 minutes until golden brown!
